Follow these steps to make your Brillar Kothu Porotta:

  1. Prep the Parota: Heat 2 Brillar Malabar Parotas on a pan until warm and soft. Cut them into fine pieces and keep aside.

   2. Sauté the Base:  Heat 2 tbsp  coconut         oil in a pan. Add 1 chopped onion, 2 green       chillies, curry leaves, 1 tbsp ginger garlic         paste, and 1 chopped tomato. Sauté for 2-     4 minutes until softened.

3. Combine & Mix: Now add the shredded parota pieces to the pan. Add 2 eggs and salt to taste. Mix well, breaking up the eggs as they cook.

 

4. Add Gravy & Finish: Add chicken gravy (if using) and mix for 2 minutes, ensuring everything is well combined and heated through. Garnish with chopped onion and coriander leaves.
